Paris’s Next Must-Stop: The Reimagined Maison Baccarat Opens This September

Words By Allegra Salvadori

On September 17, a new chapter begins at 11 Place des États-Unis. Maison Baccarat — the historic hôtel particulier where Parisian avant-garde once gathered — reopens under the visionary partnership of Baccarat and Alain Ducasse, transforming into a luminous hub for gastronomy, culture, and contemporary art.

More than a restaurant, this reinvented Maison is a destination. Visitors wander through Baccarat’s storied halls — past Harry Nuriev’s stone engravings, Marcel Wanders’ monumental vase, and Pierre Tatin’s immersive chapel of light — before ascending beneath the dazzling Tuzla chandelier, composed of 157 lights and 9,000 crystal pendants. Each room, reimagined by artists from Gérard Garouste to Philippe Nigro, celebrates the alchemy of crystal as both craft and art form.

At its heart, Alain Ducasse, with chefs Christophe Saintagne and Robin Schroeder, introduces a new dining philosophy: joyful, spontaneous, and free of formality. Lunches and dinners unfold like performances — cooks serving sweetbreads directly from the pan, dishes designed to spark curiosity, and wines curated by Bernard Neveu beneath a canopy depicting the four elements that shape crystal. Bar Midi-Minuit, guided by mixologist Margot Lecarpentier, keeps the house alive from noon to midnight with cocktails, tea, champagne, and pastries served, naturally, in Baccarat crystal.

While the full experience launches in September, guests can already preview the spirit of this rebirth at Le Jardin — Baccarat’s intimate terrace-restaurant, where Ducasse’s seasonal menu unfolds beneath chestnut trees and every drink captures the light in cut crystal.

This fall, Maison Baccarat promises not just a meal, but a celebration — a place where Paris comes to taste, marvel, and linger. Mark your calendar: the season’s most dazzling rendezvous begins September 17.
